I am going to be experimenting to see if we can find a great Fudge recipe that is Dairy Free and Gluten Free. Gwen beat me to the start and has submitted a great Gluten Free Fudge recipe for us to try. It uses Peanut Butter and what is better than Peanut Butter and Chocolate? YUM

Recipe follows for this yummy looking Gluten Free Fudge:
Gluten Free Fudge
Ingredients
- 1 1/2 cups Peanut Butter or almond butter
- 1 cup honey
- 1/3 cup Cocoa Powder
- 1 tsp Vanilla
- 1 cup chopped Walnuts
- Powdered Sugar for dusting pan
Instructions
- Spray bottom and sides of 8x8 baking pan or dish.
- Dust with powdered sugar.
- In medium saucepan, combine peanut butter and honey.
- Cook over Medium-low heat until mixture comes to a soft boil.
- Add in vanilla and Cocoa Powder
- Mix well.
- Remove from heat and stir in walnuts.
- Pour in prepared pan/dish.
- Refrigerate at least 1 hour and serve.
