Halibut is a very mild, flaky tender white fish. We are lucky that we live in the Halibut Capital of the World! Yes Homer, Alaska is known for it’s Halibut. My husband spends about as much time out in his boat fishing for Halibut and Salmon as he does working! So our freezer is full of fish. I love that my daughter in law tries so many new recipes for fish and we get to enjoy the results. This Mediterranean Halibut is so tasty!
Mediterranean Halibut
I’ll share a little secret with you. Most fish recipes that use a white, mild flavored fish can be made with chicken instead! Yes it’s true. So if you are not fond of fish you could even make this recipe substituting chicken for the fish! It will be just as tasty. I would use white breast meat from the chicken when you substitute it in a recipe calling for fish. It will give you the best results.
But for those of you who love fish, here is another great gluten-free, dairy-free recipe for Halibut! Enjoy.
Mediterranean Halibut Recipe:
Mediterranean Halibut
Ingredients
- 1 tsp olive oil
- 1 cup zucchini diced
- ½ cup onion minced
- 1 clove garlic minced
- 2 cups fresh tomatoes diced
- 2 Tbsp. fresh basil chopped
- ¼ tsp salt
- ¼ tsp black ground pepper
- 4 halibut steaks - or other white fish
Instructions
- Preheat oven to 450 degrees. Spray a baking dish with oil.
- Heat olive oil in a saucepan over medium heat and stir in zucchini, onion, and garlic.
- Cook and stir 5 minutes until tender. Remove saucepan from heat and mix in tomatoes, basil, salt, and pepper.
- Arrange halibut in a single layer in baking dish. Spoon equal amounts of the zucchini mixture over each steak.
- Bake 15 minutes in the hot oven or until fish flakes easily.
