Thai Halibut Curry Recipe, Gluten and Dairy Free
My Thai Halibut Curry Recipe is Gluten and Dairy Free and full of flavor. Quick and easy to make for an easy weeknight meal.
Living in Alaska we have to find lots of recipes for the two main fish we catch, Halibut and Salmon. This is a really good Recipe for Thai Halibut Curry! Of course you can adjust the amount of curry to the heat you like, or add more! I love cooking with Coconut milk, it seems to make everything taste so ethnic. Enjoy this recipe!
Thai Halibut Curry Recipe (modified from a food network recipe)
Thai Halibut Curry Recipe, Gluten and Dairy Free
Ingredients
- 2 tsp olive oil
- 4 shallots finely chopped
- 2 tsp curry powder
- 2 cups chicken broth
- ½ cup coconut milk
- ½ tsp salt plus ¼ tsp, plus more for seasoning
- 4 6 oz pieces halibut fillet, skin removed
- Steamed spinach
- ½ cup coarsely chopped fresh cilantro leaves
- 2 scallions green parts only, thinly sliced
- 2 Tbsp fresh lime juice
- Freshly ground black pepper
- 2 cups cooked brown rice for serving
Instructions
- In a large sauté pan, heat the oil over moderate heat.
- Add the shallots and cook, stirring occasionally, until beginning to brown, 3-5 minutes.
- Add the curry powder and cook, stirring, until fragrant, about 30 seconds.
- Add the chicken broth, coconut milk, ½ tsp salt and simmer until reduced to 2 cups, about 5 minutes.
- Season the halibut with ¼ tsp salt.
- Arrange the fish in the pan and gently shake the pan so the fish is coated with the sauce. Cover and cook until the fish flakes easily with a fork, about 7 minutes.
- Arrange a pile of steamed spinach in the bottom of 4 soup plates. Top with the fish fillets.
- Stir the cilantro, scallions, and lime juice into the sauce and season, to taste, with salt and pepper.
- Ladle the sauce over the fish and serve with rice.

Can you imagine sitting down with your doctor to examine your autistic child’s genetic code? This idea may not stay a dream for long because companies are working on cracking the genetic code and making it accessible to everyone. A breakthrough would pave the way for new treatments and a better understanding of autism.
Getting the Codes
A project from Google and Autism Speaks is working on collecting the genomes from 10,000 people with autism and their families. This would provide scientists with a large pool of data about the DNA inside a person who has autism. Ultimately, the goal is to use this research to find better treatments for the condition.
Analyzing the Data
Researchers do not think a single gene is responsible for autism, and they are interested in looking at larger segments of the genetic code. They are searching for patterns, and a database of 10,000 people will provide them with the ability to compare multiple codes. Although the cause of autism is still a mystery, sorting out the genetic code could provide important answers.
Other Factors to Consider
The project is controversial, and some researchers want to see environmental factors considered. They question the idea that genetics are solely responsible for a person having autism. How much of a role do toxins, diets and the environment play in autism? Unfortunately, there are no clear answers from research at this time, and more studies are needed to uncover the truth behind autism.
Future Possibilities for Treating Autism
The ability to have each individual’s genetic code makes it possible for treatments to be customized. In the future, your doctor could write a prescription based on your child’s DNA and avoid wasting time on drugs that are not right. Your doctor would be able to create the perfect treatment plan.

Chocolate Chip Oat Muffin Recipe Gluten Free Dairy Free
Ingredients
- ¾ cup packed brown sugar
- ¼ cup coconut oil melted
- 1 egg
- 1 cup gluten-free all-purpose baking flour
- 1 Tbsp ground cinnamon
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 cup applesauce
- 1 cup rolled oats
- 1 cup dairy-free chocolate chips we use Enjoy Life Chocolate Chips
Instructions
- Preheat oven to 350F.
- Grease 12 muffin cups or line with paper muffin liners.
- Beat brown sugar and coconut oil together in a bowl, add egg and beat until creamy.
- Whisk flour, cinnamon, baking powder, baking soda, and salt together in a separate bowl.
- Stir ½ the flour mixture into the coconut oil mixture.
- Stir applesauce into coconut mixture, mix well.
- Stir remaining ½ of the flour mixture into coconut oil mixture until just combined
- Add oats and chocolate chips.
- Pour muffin batter into prepared muffin cups.
- Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 25 minutes.

Mental Health Treatment Options Grow with Smartphone Apps
Researchers from the University of Michigan have developed an app that brings new hope to mental health patients seeking treatment options. The PRIORI app relies on a smartphone to work and monitors the behavior of a patient. It is capable of analyzing the voice and compiling the data to help people take control of their illness.
Listening and Understanding
The app was created to help predict mood swings for people with BIPOLAR DISORDERS. By listening to the voice of the person with the illness and understanding the differences that can occur, the app is capable of predicting mania and depression. Early testing showed positive results, and patients were willing to use the smartphones without problems. Researchers hope this will lead to better treatments for all mental health patients.
Future Uses
Researchers hope that eventually the data from the app will automatically be sent to friends, family or medical professionals who have permission to receive it. They would receive advance notice of a person becoming manic or depressed and would be able to take action before problems become worse. This is a powerful tool, but researchers promise that privacy is being preserved, and data will not be shared with anyone who does not have the right to see it. Although one side of the conversation is being recorded, it is compliant with the law, according to the University of Michigan.
What You Say Matters
The study reveals that what a person with bipolar disorder says matters, and how they say it is also important. By analyzing the speech, the app is capable of detecting future problems, and it is directly linked to mood swings. Researchers are continuing the project, so there is still time to sign up. More participants will allow them to expand the data pool and continue to search for patterns.

Rhubarb-Raspberry Crisp Recipe
Rhubarb is great juiced or cooked in sauces or pie filling. I have used it with blueberries or strawberries and it is a fabulous cobbler. Here is my DIL’s recipe for Rhubarb Raspberry Crisp. We enjoy it Luna & Larry’s Vegan ice cream.
We freeze a lot of our fruit for winner jam and cobblers. Here in Alaska, Rhubarb seems to grow like a weed and so do raspberries. So we have an abundance to pick and store. My Rhubarb I have babied everyplace I have lived since the original cutting came from my parents homestead in North Dakota. Each new location from Oregon, California, Montana and now Alaska I have dug a cutting, for and, from each home and it has thrived. Now my DIL has two cuttings of the plant and she’s already putting up Rhubarb from a 2nd year growth.
Rhubarb-Raspberry Crisp Recipe
Ingredients
- 1 cup white sugar
- 1 Tbsp instant tapioca
- 1 Tbsp cornstarch
- 1/8 tsp salt
- 4 cups rhubarb cut into ½ inch pieces
- 1 cup raspberries
- 1 cup brown sugar
- ½ cup gluten free flour
- 1 cup quick cooking oats
- ½ cup coconut oil melted
Instructions
- Preheat oven to 350F.
- Grease a 9x13 baking dish.
- In a large bowl, combine sugar, tapioca, cornstarch and salt.
- Place rhubarb and raspberries into bowl making sure to completely coat them with dry ingredients.
- Pour into baking pan.
- In a medium bowl, melt the coconut oil
- Mix in brown sugar, flour and oats.
- Spread on top of the fruit mixture.
- Bake in preheated oven for 45 minutes, or until rhubarb is tender.
