This hot, hot, hot Cheezy Artichoke Dip Recipe is both Vegan & Gluten-Free. So often since I have gone gluten free I crave some crunchy carbs and something smooth and cheezy like to dip into. This fits the bill since you can use corn chips for dipping. This dip is also Vegan Gluten Free and great for parties! We love this during the holidays.
Hot Cheezy Vegan & Gluten-Free Artichoke Dip Recipe
Ingredients
Cheezy Sauce
- 1 cup hot tap water
- 1 cup cooked brown rice
- 3/4 cup raw cashews
- 1/4 cup cooked carrots
- 2 Tbs nutritional yeast
- 1 Tbs fresh lemon juice
- 1 1/2 tsp salt
- 1 tsp onion powder
- 1/4 tsp garlic powder
Tofu Blend:
- 1/2 cup firm tofu
- 2 Tbs fresh lemon juice
Veggie Saute:
- 1 cup chopped onion
- 2 med garlic cloves minced
Artichokes & spices
- 2 jars of marinated artichoke hearts-drained
- 1/4 cup bread cubes gluten-free if needed
- 2 Tbsp minced fresh parsley
- 1/2 tsp seasoned salt
- 1/8 tsp oregano
Instructions
- Blend the ingredients for cheezy sauce in a heavy-duty blender until smooth then set aside
- Blend the tofu and lemon juice in a blender until smooth
- In large mixing bowl add the Tofu Blend, Veggie Saute, Artichokes and spices....stir til blended then add 2/3 c cheezy sauce (more if you like it thinner consistency) Place all ingredients mixed into a baking dish, sprinkle with paprika and bake 350 degrees for 30 minutes.
Nutrition
Serve this dip with your favorite dipping veggies, bread or chips. You can serve it from a fondue pot or pour it into a bread bowl or large tostada shell.

this looks wonderful. the only thing that holds me back is i can’t eat tofu. i have been fighting breast cancer for 7 years. When I say 7 I mean that it has been metastatic and I have been undergoing chemo for 7 years. Once thing my nutritionist said was since it was estrogen positive not to have tofu or soy because those are both filled with estrogen and we don’t want estrogen. Do you know if there is any validation to this? I tried going vegan without the tofu and had to be hospitalized because I was slowly killing myself without enough protein and nutrients. Any advice?
