I love Avocados, so anything made with them are a delight for me. Adding beans gives you your protein. This is such a delicious salad – try it and you will be hooked.
Fresh Black Bean Salad
You could substitute any other bean if you are not a black bean fan. I think it is fun finding all the different types of beans to have them in my diet. Between the different colors, textures and tastes, I never get tired of beans. You may need to try some Beano before you partake of beans if they give you too much gas. This recipe is dairy free, gluten free and vegan! Enjoy.

Ingredients
- 15 Ounces Black Beans Rinsed
- ½ Cup Cilantro
- 1 Small Sweet Onion Sliced and Chunked
- 1 Medium Avocado Chunked
- 1 Large Jalapeno Chopped or sweet pepper if you can't do heat
- 1 Tablespoon Fresh Lime Juice
- salt & pepper to taste
- dash of balsamic vinegar if you want
Instructions
- Combine black beans, cilantro, onion, avocado, jalapeno, and lime juice. Add salt and pepper to taste. If you like balsamic vinegar you could add a dash.
- Toss with fork.
- Chill one hour.
- Serve.
