There are a few flavors that are always associated with Christmas – peppermint, egg nog and last but not least, gingerbread. There is no reason that you can’t enjoy gingerbread even if your diet is restricted. These gluten free Gingerbread Muffins are gluten-free, dairy free and vegan. They are delicious and perfect for Christmas morning! I’ve heard these muffins are SO good that they were gone in three days!
These muffins are safe for friends and family – even those with food allergies and sensitivities. They can be made ahead of time, but they are truly marvelous when eaten warm just out of the oven.
Vegan & Gluten Free Gingerbread Muffins
Gingerbread Muffins Gluten-Free Vegan
Ingredients
- 1/3 cup canola oil
- ½ cup sugar
- 3 cups gluten-free flour blend of your choice
- ½ teaspoon xanthan gum
- 1 ½ teaspoons baking soda
- 1 teaspoon cinnamon
- 1 ½ teaspoons ground ginger
- ½ teaspoon salt
- 1 cup molasses
- 1 cup hot water
Instructions
- Grease muffin tin, or line with baking cups
- Preheat oven to 350 degrees
- In a large bowl, combine all ingredients and mix until well blended
- Pour into muffin cups, fill each about ¾
- Bake 35 – 40 minutes, until a toothpick inserted in the middle comes out clean

I think these look super yummy. I try to eat ginger often as it is so good for my belly. I love these are dairy and gluten free. That would cover all of the sensitivities for my family.
