Slow Cooker Halibut Curry
I love curry and this dish is very easy to prepare. All you need is a Crock-pot or Slow Cooker and you are in business! This recipe uses onions, sweet potatoes, chickpeas and fish to make a flavorful stew that can be eaten as is or over rice. Did I mention it is dairy and gluten free also? I just love the ease of making a one pot meal! There is not much clean up and you have a flavorful meal! Enjoy.
Slow Cooker Halibut Curry
A tasty and easy fish curry
Servings: 6 servings

Ingredients
- What you will need:
- 2 lbs halibut fillets skinned and cut up ( or any other white meat fish )
- 1 medium onion thinly sliced
- 15 oz can chick peas drained and rinsed
- 2 medium sweet potatoes peeled and diced
- 1 cup coconut milk
- ½ cup chicken broth
- 2 15 oz cans tomato sauce
- 3 Tbsp curry powder
- 2 tsp salt
- ½ tsp cayenne pepper
- 2 Tbsp fresh lemon juice
Instructions
- Directions:
- In the bottom of the slow cooker, whisk together coconut milk, chicken stock, tomato sauce, curry powder, salt, and cayenne.
- Add halibut, onion, chickpeas, and sweet potatoes. Using tongs, gently toss ingredients together to ensure they are evenly coated.
- Cook on low for 6 hours or high for 3 hours. Stir lemon juice in 5 minutes before serving.
- Serve over hot cooked rice and garnish with fresh cilantro if desired.
