This is a clean dutch oven root dish recipe which uses organic beef. You could also make this recipe in a crockpot or slow cooker, instead of cooking it in a Dutch Oven on your stove top! AND you could also bake this on low in an oven. So there are lots of options here making this root dish. Try throwing in parsnips or turnips if you prefer. There are so many great root vegetables this time of year! This recipe is gluten and dairy free.

Dutch Oven Root Dish
Ingredients
- 1.5 pounds stew meat
- 1 large golden beet
- 1 medium sweet potato
- 1 small onion
- 3 carrots
- fresh thyme salt and pepper to taste
- 4 to 5 cups of quality bone broth or stock we use homemade chicken bone broth with amazing results.
Instructions
- Brown the meat on all sides then place in the bottom of your Dutch oven.
- Wash, peel and chop the vegetables and place on top of the meat.
- Add the salt, pepper, fresh thyme and broth on top.
- Cover and cook on low to medium low for about 90 minutes.
- **The final cook time and temperature will depend heavily on how hot your stove top cooks, ours runs very hot so we have to cook on low and keep a close eye on it, sometimes adding a little more liquid to make sure it does not burn.
- The size of the meat and vegetable pieces will also make a difference in the cook time. If this is your first time using a Dutch oven, take a few quick notes about the ideal temp and cook time so you’ll remember for next time!
- The richness of the broth mixed with the hearty vegetables makes this a fantastic dish that is easy to prep ahead of time and will give you perfect leftovers.
