In keeping with a St Patrick’s Day theme, these are fun kale pancakes to make. You could also make them for Christmas since they will be on the green side in color. They are also healthy!! You can use curly kale or lacinato kale, also called dinosaur kale, when making these pancakes. They both blend and juice well. Kale leaves give excellent health benefits such as lowering cholesterol, fighting cancer, and decreasing inflammation.
Healthy Kale Pancakes
When you prepare the kale leaves be sure to toss the thick stem. I cut or rip off the kale leaves to use them and toss the hard stems away.

Recipe for Healthy Kale Pancakes:
Kale Pancakes
Ingredients
- 2 cups almond milk or preferred dairy free milk
- 1 Tablespoon raw honey
- 2 large handfuls of chopped fresh organic washed kale
- 3 tablespoons coconut oil plus more to grease the pan with.
- 1 cup of your favorite gluten free pancake mix
Instructions
- You may want to add a little more liquid or mix depending on your preferences.
- I like to warm the almond milk slightly then add in the soft or liquid coconut oil.
- Warm almond milk will allow the batter to start to rise a little bit and give you a fluffier pancake. Pour this mix into your blender and add in the kale.
- Blend on high until you have a completely smooth and perfectly natural green liquid.
- Add the one cup of pancake mix and honey to the blender and blend on low until just combined.
- For standard pancakes, heat your nonstick pan to medium and add some coconut oil. I like to use a large squeeze bottle for making shapes and names, but you can certainly free hand it as well!
- If you would like to keep the pancakes totally green and not have them brown on one side, turn your heat down to low and allow them to cook very slowly from just the bottom through to the top. This will take a little longer but has a really fun final look that many will love!

I don’t know about putting Kale in pancakes. I have never tasted what Kale taste like so maybe they taste good.
