I love curry and green curry is not a hot curry, it just is really yummy. Thai Green Curry Paste and coconut milk are always a good combination! This is a great summer meal choice, quick and easy.
Thai Green Curry Alaska Salmon
Living in Alaska, I have mentioned we fish for our own salmon and halibut so our fish is wild and fresh! You can use any stir fry veggies you like with this recipe. We used some tomatoes, green beans, carrots and chard. Enjoy!
Recipe for Thai Green Curry Alaska Salmon
Thai Green Curry Alaska Salmon
Ingredients
- 1 Tbsp canola oil
- 2 tsp green curry paste
- 13.5 oz coconut milk 1 can
- 2 Tbsp oyster sauce
- 1 Tbsp light brown sugar
- 4 salmon fillets 6-8 oz each
- your choice of fresh veggies to stir fry
Instructions
- In a large nonstick pan or stockpot, cook the curry paste in oil until fragrant, about 1 minute.
- Stir in coconut milk, oyster sauce, and sugar. Bring to a boil.
- Turn off heat and gently add salmon to sauce, skin side down.
- Place thinly sliced veggies of your choice on the fish.
- Return heat to simmer. Once simmering, cover pan and cook 5 minutes.
- Turn off heat and let salmon rest 5 minutes or until is it opaque throughout.
- Serve over cooked rice.
