Wonderful Pecan Loaf Recipe
I miss meatloaf and have found this pecan loaf a great replacement that tastes very good. Leftovers in sandwiches are a great way to use this recipe…yummy. This recipe has 11% protein per serving which is all we really need for a daily protein intake. Baking this recipe in a round ceramic casserole dish is how I like to serve it.
I really like casseroles and haven’t found as many to use since going gluten-free. I use to love casseroles that contained hamburger. But I am now finding plant based replacements, like these pecans, to use in place of “meat” and it tastes just as great!
Nuts of all kinds are a great replacement for burger. I also use a few select products by Gardein and Beyond Meat in the freezer section. Beefy Crumbles are a great replacement for hamburger when you are in a hurry, but I still prefer using nuts!
It seems like being either vegan or gluten-free is a bit easier in finding recipes than being both. So I am glad to share what are good tasting to me and plan to share more great recipes with you as I find easy tasty recipes.

Pecan Loaf Recipe:
PECAN LOAF
A great GF and DF alternative to meatloaf
Servings: 12 servings
Calories: 244kcal
Ingredients
- 1/2 cup tofu I found using gluten free bread crumbs it needed more moisture so I would increase it to almost 3/4 cup tofu if you are gluten-free
- 2 cups water
- 4 cups gluten free bread crumbs
- 2 cups ground pecans
- 1 cup chopped onions
- 1 Tbs Gluten Free Soy Sauce or Bragg's Liquid Amino's
- 1 1/2 tsp sea salt
- 2 Tbs tomato paste
- 1 tsp garlic powder
- 1 Tbs onion powder
- 1 tsp sage
- 1 tsp rosemary
- 1 tsp basil
Instructions
- Blend tofu and water
- Add the rest of the ingredients and mix well and place into a baking dish
- Cover the loaf with BBQ sauce or the following sauce recipe
- Mix together: 2 Tbsp ketchup, 1 Tbs Balsamic Vinegar, 1 Tbs maple syrup, 1 Tbs apple butter
- Bake covered in 350 oven for 40 minutes. Check to see if done in middle. If too moist bake another 10 minutes.
Notes
Serve with potatoes and gravy.

First, let me say that I am in no way trying to be rude. I sometimes come across that way in print and it is not intended to be. This is the oddest recipe I’ve ever seen. So much so that I want to try it. I’m usually a total meat eater. I need to eat healthier.

Hi Lisa, I don’t think you are being rude. I just think you have not eaten much vegan or vegetarian food 🙂 This is a very common loaf to make and is delicious! There are variations of it using cottage cheese also…or cream cheese.
I grew up eating vegetarian…and meat. But the school I went to only served vegetarian. So we ate many variations of “meat and chicken” that is meat free 🙂

This looks and sounds good! Pecans are getting pricey, but if a person is trying to up their health, it is worth it!!! I wonder if roasting pecans in the oven a few minutes to bring out their flavor would amp up the taste, too.

I know lots of vegans but none who roast the pecans for this loaf…so you’ll have to try it both ways and see which is best. Roasted pecans may be too strong?

But for this recipe any firm tofu will work and you just buy it the fresh produce section…
and throw it in a blender for this recipe 🙂
