Do you have leftover turkey you need to use? Then this recipe for Leftover Turkey Soup with Rice is just what you need! If you have chicken sitting around you can use that as well. But this soup is amazing with turkey! I find that rice holds up better than gluten-free noodles, I love using my own rice for home-made soup. It just seems the rice in canned soup doesn’t even taste like rice.
Leftover Turkey Soup with Rice:
Leftover Turkey (or Chicken)
3 Quarts Water
5 TBSP Chicken Stock Starter
4 Carrots
4-6 cups rice, prepared
Directions
In a Large Pot,combine water and chicken.
Bring to a boil.
Slice carrots into coins and add to pot.
Let simmer until carrots are soft and chicken is falling off the bones.
Remove Chicken Carcass from Pot and place on cutting board or large platter.
Remove chicken from bones and return to pot.
If you are worried about bones or gristle in the broth-you can drain it into another pot.
Stir in rice and serve.

I agree that rice is much better than noodles. However, I use organic brown rice mixed with some wild rice, and because I try not to eat meat, I will use veggie broth cubes and fake chicken. Great lunch for my hubby for today!
