This delicious Raw Apple Pie Recipe is one of my favorite ways to eat my favorite. The Gravenstein Apple is my absolute favorite, typically I make applesauce with them. There are so many varieties of apples available! Living in Alaska I tried growing an apple orchard and did pretty well for the first couple years until we had a huge snow fall over winter before last. It was about 5 ft deep and I tried to dig out the wells around the base of each tree.
What I wasn’t expecting was a huge rabbit population that year and they found ways of getting into my 8ft fenced garden/orchard! I had already banded the trees with wire that was 3 ft tall, but the rabbits would jump from the already 5 ft of snow into the branches of the apple trees and devour them. The rabbits scored, girdled all the apple tree trunks but for 2 of my apple trees. I tried to replant a few trees, even wrapping them in burlap within the 8 ft fence thinking that would keep the rabbits off the limbs. I looked out early this winter and it had been so sloppy wet and snowy that somehow it drenched the burlap and the trunk must not have been strong enough hold the weight, the trunk broke in half! I have a healthy respect for growing fruit trees beyond what I already did!
So enough of my apple tree trials…..Here is my fabulous Raw Apple Pie Recipe!
Raw Apple Pie Recipe:
RAW Apple Pie Recipe, Vegan Gluten Free
Ingredients
- 3 cups nuts pecans, walnuts, almonds
- 1 cup dates full medjool dates, chopped up
- 4 medium apples or 5 small apples
- 1 tbsp cinnamon
- 1 tbsp apple cider vinegar or 1 tbsp of lemon juice
Instructions
- Step 1: In your food processor, coarsely grind together the nuts and half of the dates until a workable dough is formed – do not over combine. Take about 2/3 of the dough, and press it into the bottom of a pie pan. Set the other 1/3 aside to be used as topping.
- Step 2: Using a mandolin or your food processor, thinly slice the apples and place in a bowl. Blend together the rest of the dates with the apple cider vinegar, cinnamon, 3 tbsp of water, and a couple of the apple slices to form a paste. Pour the paste into the bowl with the apples, and toss – being careful not to break the apple slices. Arrange the apple slices in the pie, layering them so that their sides are slightly overlapping (like how fruit always looks on tarts).
- Step 3: The dough that’s set aside can be rolled out and cut into strips to make a lattice topping, or you can crumble it over the top like an apple crisp if you’re in a hurry. Cut into 8 equal pieces, and keep in the fridge for a couple of days.
