My daughter in law, Becky, is a fantastic cook and makes these “to die for” No Bake Chocolate Cookies using gluten-free quick cooking oats! Her son is allergic to dairy and has sensitivities to gluten, soy, nuts and more. I am a junkie for chocolate! So when we visit she often makes these cookies. I have begged for this recipe many times! For those who can’t eat peanut butter, just substitute sunflower butter for the peanut butter making them nut free. These cookies are so yummy!
Becky said she will share her recipe with us! Yippee! These are just so easy, and great for summer treats not having to heat up the kitchen! And to make things even better they are easy to make. So if you are looking for a NO BAKE cookie recipe that is gluten-free and dairy-free, here you go!
No Bake Chocolate Cookies Recipe:
- 2 cups organic sugar
- ½ cup non dairy milk of your choice ( almond, soy, rice, etc )
- 3 Tbsp cocoa
- ¼ lb non-dairy margarine
- 1 tsp vanilla
- ½ cup peanut butter ( can use sunflower butter )
- ¼ tsp salt
- 3 cups Quick Cooking Oatmeal, gluten-free
- Putting it all together:
- Cook the sugar, milk, cocoa and margarine in a saucepan to a rolling boil, stirring continually for 1 minute. Remove from heat and add remaining ingredients. Mix well and drop by spoonfuls onto wax paper; let harden
- Then enjoy!
