I love to try alternative methods for pain management when possible.  I had the opportunity to review an Electronic TENS Unit Pulse Massager by TruMedic.

I get muscle spasms often in my back when I do garden work and-or lifting.  I have degenerative joint disease in my spine and it seems to affect my muscles.  A few times I have had to go to the hospital for treatment with a TENS unit to help relieve pain and loosen up my muscle spasms.

Recently my shoulders, back and lower back were really talking to me after working in my greenhouse.   I was in our local pharmacy – hardware store and noticed they had a type of TENS unit that was all one big stick on patch.  I purchased it but it didn’t help nearly as well as the TENS unit the hospital used.

When TruMedic reached out to ask if I would like to review one of their products, I jumped at the chance when I was told I could review a TENS unit with multiple electrodes.   The PL-009 TENS Unit Electronic Pulse Massager was just what my back needed!  The type of electrode stimulation or pulses were very similar to what the hospitals TENS unit did!   Since this little unit uses batteries, I could still be mobile and sit and watch a movie or move from room to room while using it.  And it had so many choices of speed, intensity and rhythms to choose from that I am in LOVE with this unit.    First time I used it, it gave me relief from my pain.  I tried different pre-programed settings but love the back setting.  I have used it on my shoulders both sides,  then on my mid back both sides and then again on my lower back & hips both sides.   When I was done with all three cycles, I felt great!

Living in Alaska we catch our own salmon.  Salmon is so rich I can’t eat alot of it at one time.  Having Salmon in a salad is a great way to get a healthy meal!  This Salmon is prepared quickly by frying with blueberries for an added flavor that is out of this world!   Bring your favorite salad greens into a plate or bowl and top it with this Salmon and Blueberry Salad recipe!

Salmon and Blueberry Salad, Dairy and Gluten Free

Salmon is an excellent source of vitamin B12, vitamin D, and selenium. It is a good source of niacin, omega-3 fatty acids, protein, phosphorus, and vitamin B6. It is also a good source of choline, pantothenic acid, biotin, and potassium.   And our Alaskan caught salmon is wild!

The color of this salmon isn’t as pink as some.  Humpy or Pink Salmon are very light in color when cooked and very mild in flavor.  Perfect to soak up the blueberry flavors.

Ingredients

  • Large Salmon Filet
  • 3/4 cup Blueberries
  • 1/8 cup Lemon Juice
  • 1/2 cup Purple Cabbage shredded
  • 1/2 cup Shaved Carrots
  • 1 cup Romaine Lettuce chopped

Instructions

  • Place salmon in a pan and coat in lemon juice. Sprinkle with salt and pepper if desired.
  • Place a handful of blueberries in the pan with your salmon.
  • Fry until the salmon is fully cooked and has a blue tint from the blueberries.
  • Chop your purple cabbage and romaine lettuce and place in a bowl with your shaved carrots.
  • Break salmon into 2 pieces and place one piece on top of each salad along with the roasted blueberries and a few fresh uncooked blueberries.
  • Top with your favorite dressing and enjoy!

Blueberry Fruit Leather or Roll Ups

When my boys were little I would make all kinds of fruit leather for them to snack on, blueberry fruit leather is one of my favorites!.  It is so healthy, naturally sweet, chewy and satisfying!   We use to put the leather on cookie sheets and lay them on the roof or on the back porch to dry in the summer heat, our temps were over 90 degrees during the summers in Montana.   Here in Homer, Alaska we have to make fruit leather in the oven.    I am going to start making this for my grandkids for snacks when they are here.   It is so good.   Fruit leather also makes great school lunch snacks!

You can use this technique and method with any fruit.  I have used it for apricots, plums and raspberries.   Whatever fruit you have around that is getting ripe, bring out your blender and make up some fruit leather.  I guess it’s also called fruit roll ups.

Ingredients

  • 3 Cups Fresh Blueberries
  • YUP that is all that you need. PURE fruit - nothing else.

Instructions

  • Puree until no chunks appear and the fruit is the consistency of a thick smoothie.
  • Pour the pureed blueberries onto a small cookie sheet that is lined with parchment paper.
  • Spread blueberry mixture flat. Do not leave thin areas as this will cause mixture to stick in the drying process.
  • Place in oven for around 3 to 3.5 hours and bake at 175 degrees.
  • Once the mixture has dried out in the oven, remove it to cool down.
  • Once cool, place the dried fruit over onto another clean parchment paper. Then cut the fruit in strips laying on the parchment paper.
  • Roll up fruit like you would a fruit roll up. You can store it in the cupboard.

Lemon Lime Taco Chicken Kabobs, Gluten & Dairy Free

I serve these kabobs by taking the chicken off, dripping any leftover lemon lime into the chicken then I serve them up in taco shells with shredded cabbage and a spicy slaw dressing!   You can choose hard or soft taco shells but we like the crunch of the hard corn ones.   Absolutely delicious.  You could substitute fish for the chicken on these kabobs and they would be divine!

Ingredients

  • 2 Chicken Breasts cut up.
  • 1 Lemon
  • 1 Lime
  • Taco Seasoning

Instructions

  • Line a baking tray with tin foil
  • Chop your chicken, lime, and lemon into large chunks.
  • Place one chunk of chicken on the skewer and follow it with a piece of lime and then a piece of lemon. Repeat until skewer is full.
  • Place on foil lined cookie sheet and cover generously in taco seasoning.
  • Bake for about 45 minutes or until chicken is cooked, as desired, at 350 degrees.

My Rhubarb comes from my family’s homestead in Cleveland, North Dakota.   My great aunt dug some root and planted it when she moved to Oregon.  She lived in Oregon her entire life.   We ended up living 2 door down from her when I was a little girl.   So when I visited home as I grew older, she’d always dig up a piece and I’d plant it wherever I lived.  I’ve had cuttings from the same rootstock from ND growing in California, Montana and now Alaska where we currently reside.  This Rhubarb rootstock grows like crazy and the flavor in baked goods is so good.   I’ve dug root plantings and given it to friends and family as we have moved from place to place.

Did you know Rhubarb actually has fabulous health benefits?   Most of the health benefits are related to polyphenols called tannins and anthraquinones.  Rhubarb is easily absorbed after ingestion!  So it’s a very safe way to get your polyphenols.

Rhubarb Helps Fight inflammation – Inflammation is a protective mechanism of the body.  But when we have chronic inflammation it can lead to various diseases and problems. Rhubarb has powerful anti-inflammatory effects! Did you know that Rhubarb has often been used in Chinese medicine as a treatment for inflammatory diseases like appendicitis and rheumatoid arthritis?

Rubarbs Helps digestive problems – Rhubarb helps digestive issues and gastrointestinal disorders such as constipation.   A compound in the plant called rhein is known to promote bowel movements.   The tannins in Rhubarb are anti-diarrheal compounds,  they help to regulate the absorption of water in the digestive tract which helps to prevent diarrhea.

Researchers have found that, rhubarb is also effective at helping improve proper kidney function!

So use Rhubarb in ways that you like and know you are helping your body at the same time.   Just remember the leaves are poisonous so throw those away.  Only use the lovely stems!

The photo above shows this Rhubarb Dump Cake that I baked in a Pampered Chef Deep Dish Pie Plate.  It is only $20!! It is unglazed stoneware inside and glazed on the outside.  It bakes so evenly and things just don’t stick!  I love this dish and use if for cakes and casseroles too! I’ve had mine over 20 years and it performs like new!

FYI I have used frozen rhubarb before with this recipe and it doesn’t work – it has too much liquid.

Ingredients

  • 4 cups fresh rhubarb diced small
  • 1/2 cup organic sugar
  • 3 oz strawberry or raspberry jello - I used strawberry
  • 1 package Gluten free white or yellow cake mix -I used Pamela's
  • 1/2 cup butter substitute melted
  • 1 cup water

Instructions

  • Place Rhubarb in un-greased baking pan, I used extra large pie dish but 9x9 or 9x13 works well
  • sprinkle sugar over rhubarb
  • sprinkle jello over sugar
  • sprinkle cake mix over all…
  • drizzle melted butter substitute over cake mixture
  • drizzle water over the butter mixture.
  • I rolled the pan to make sure water at least touched all the dry cake flour. The ingredients do not mix together. You are just dumping things in order on top of each other.
  • This leaves a slightly crunchy sweet topping on the crust after being baked.
  • Bake 350 for 50 minutes. Serve warm alone or with dairy free cream or ice cream or as my husband does, pour your favorite non dairy creamer on top.

Here is another Breakfast Dessert recipe I think you and your kids will love!  My mother’s original recipe for Date Raisin Bars has been one of my favorites and I am sharing it with you.   I love to eat them for breakfast but mom also served them for dessert!   It’s very easy and nutritious and tastes so sweet!  I’ve converted it using gluten free flour!  You can’t tell it’s gluten free.  My husband said you gotta make these more – so you know they are good.

Since this recipe is my mom’s ORIGINAL recipe, it probably calls for more sugar than you may want.  Just cut the sugar and don’t worry about replacing it with anything – it should be fine.   We have always liked it really sweet.  In fact this recipe I am sharing has LESS sugar than my mom’s original recipe.  I cut the sugar back even from hers!

The original way to make these was to use raisins. Dates for used for very special occasions because they were so much more expensive than raisins!   We have also made it with a mixture of both raisin and date or just date.  Some back in the day also mixed very finely chopped nuts into the filling but I like the texture of the filling without the nuts.   You can also substitute the butter or butter substitute with coconut oil.   I tend to light the richness of more dates so I use a mixture most often that has a bit more dates.   So play around with it and enjoy!   The recipe I used is below.

I used the following Bob’s Red Mill products for making the Breakfast Dessert Raisin Bars –  Organic Gluten Free Oats and their newer Gluten Free 1-1 Baking Flour made to be used to replace any flour cup for cup!

Raisin Bars

The recipe calls for cut raisins.  My mom use to cut them with scissors believe it or not!  But thank goodness for technology!  I use the Cuisinart Mini Prep below to blend or chop so many things for baking!  It’s a very handy tool to have in the kitchen.   It chops about 2 cups easily at one time.  I love it.  You can get yours HERE.

Ingredients

Crumb Crust

  • 2 cups Organic Gluten Free Oats
  • 2 cups Gluten Free Flour
  • 2 cups Brown Sugar
  • 1 cup butter or butter substitute melted - I use Earth Balance Vegan Shortening
  • 1/2 tsp baking powder
  • 1 tsp salt

Filling

  • 4 cups raisins chopped Or you can use dates chopped. OR you can use a mixture of both!
  • 1/2 cup sugar organic
  • 2 cup filtered water
  • 3 Tablespoons corn starch

Instructions

  • CRUMB MIXTURE: Mix all the Crumb Crust ingredients together in one bowl. I blend with a fork, then use my hand. The topping should be very crumbly but if you put some in palm of your hand, it should hold together when crunched. See the photo.
  • FILLING: Put all the filling ingredients into a sauce pan and bring to boil. Continue to simmer until thickened. Remove from heat.
  • Spread 1/2 the crumb mix into bottom of greased 9x13 baking pan. Spread with the cooked raisins and top with the other 1/2 crumb mixture.
  • Bake at 350 for 25 minutes, remove and cool in pan. Cut into squares and enjoy!

How to Mill Flour at Home

I had the opportunity to try a grain mill from Mockmill Home Grain Mill and learn how to mill flour at home!  Eating Gluten Free, I thought how fun to be able to make Banana Bread with freshly ground Chick-pea meal!  I have heard how good it is in baking breads.  I know that the Mockmill is meant for grains such as wheat and other grains such as quinoa, rice, sorghum, oat and others.   But I really wanted to try what is called Besan flour (also known as )Gram or Chickpea flour.   In order to have Besan Flour, I had to grind Chick-peas.  I knew that if the MockMill could grind the Chick-peas then it could grind anything!slide_2

 

Below are photos of me opening the box that was shipped to me containing the MockMill.  I was so excited.

I removed the little screw that was in my KitchenAid, the Mockmill shaft fit into the KitchenAid hub perfectly.   The screw took me awhile to get it secure but once that was done the Mockmill was securely held in the KitchenAid.

The photo below shows how the grain can be made finer or more coarse by turning the head to larger or smaller dots.  I tried milling on the 3rd from the finest dot for the chick-pea meal but it wasn’t fine enough so I switched back to the 2nd from the finest and it was just perfect.   It took about 10 minutes to grind 1 and 3/4 cups of flour from the chick-peas.   The photo below shows the chick-peas in the Mockmill grain feeder.  The Mill rocked slightly as it ground the chick-peas although it was very tightly secured in the KitchenAid hub.   I then put rice in the feeder tray and it quickly made rice flour.    This will be so great to have freshly milled meal/flour for baking!  You don’t have to be there to watch it!  You just put your grains in the feed tray and you have flour in a few minutes!

Banana Chocolate Chip Bread – Gluten Free Dairy Free

Back to the recipe for this delicious Banana Chocolate Chip Bread.  This recipe is healthy, using great ingredients like apple cider vinegar, coconut oil and lots of other healthy things.  The bread also rose nicely, even being gluten free!   I love using these smaller commercial bread pans for gluten free breads.  They bake through the loaf better and don’t seem to make the edges of the bread as dark.  This bread would be very good with 1/2 cup ground walnuts in it too!  

My cousin was visiting from the lower 48 when I made this bread.   She loved the taste!  You would not know this is gluten free!  In fact I wasn’t home when my hubby got home.  I had already cut a couple pieces of bread for my cousin and myself so the loaf of bread was on the table.   When I got home my hubby said he’d eaten a bunch of the banana bread and wondered where I “bought” it!  I said I baked it and he was amazed.  He said it tastes so good.   I told him it only has besan flour in it and he said you gotta make that again!   You can buy Besan Flour here.

Banana Bread with Freshly Milled Besan Flour Dairy Free Gluten Free

Ingredients

  • 3 medium ripe bananas mashed
  • 3 tablespoons honey
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 tablespoons coconut oil melted and cooled
  • 1 teaspoon apple cider vinegar
  • 1 1/2 cups besan flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips - dairy free I used Enjoy Life

Instructions

  • Preheat oven to 350 degrees F.
  • Grease a 8x3 inch loaf pan with nonstick cooking spray.
  • In a medium bowl, whisk together chickpea flour, baking soda, cinnamon and salt; set aside.
  • In a large bowl, combine bananas, honey, vanilla extract, eggs, coconut oil, apple cider vinegar and chocolate chips; mix until well combined and creamy.
  • Add dry ingredients to wet ingredients and mix until just combined.
  • Pour batter into prepared pan and smooth top.
  • Cover with foil and Bake for 45 - 50 minutes - Remove foil last 10 minutes to help brown if needed.
  • Remove from oven and place on wire rack to cool for 10 minutes, then carefully invert, remove bread from pan and place back on wire rack to cool completely. Cut into 12 slices.
