Slow Cooker Minestrone Soup
Are you craving some vegetables? Here’s an easy and healthy dinner recipe for you with lots of veggies and vegetable protein, Minestrone Soup! And the best part is that it is a Slow Cooker Recipe to be used in a Crock-Pot! Another great meal to put together in the morning and forget it! It’s ready in the evening when you are. Just add a nice loaf of gluten free bread and enjoy.

Slow Cooker Minestrone Soup
Ingredients
- 6 cups vegetable broth
- 2 carrots chopped
- 2 large onions chopped
- 2 garlic cloves minced
- 1 small zucchini cubed
- 1 handful fresh kale chopped
- 1 can chickpeas or white kidney beans, drained
- 1 Tbsp parsley
- ½ tsp dried thyme
- 1 tsp dried oregano
- 28 oz can crushed Italian tomatoes
- 1 tsp salt
- ¼ tsp pepper
Instructions
- Combine all ingredients in slow cooker. Cover.
- Cook on low 6-8 hours, or until vegetables are tender.

Slow Cooker BBQ Chicken Recipe
Ingredients
- 12 boneless skinless chicken thighs
- 2 cups ketchup
- 1 cup water
- ½ cup vinegar
- 5 Tbsp brown sugar
- 2 Tbsp sugar
- 1 Tbsp ground pepper
- ½ Tbsp mustard seeds
- ½ Tbsp onion powder
- ½ Tbsp garlic powder
- 2 Tbsp chopped garlic
- 2 Tbsp lemon juice
- 2 Tbsp Worcestershire sauce
- Liquid smoke or smoked salt to taste
- Seasoned salt
Instructions
- Mix all together in slow cooker, cook on low 6-8 hours.
- Serve over rice

Foods You Must Avoid with Bipolar Disorder
Diet is an important part of managing bipolar disorder, and there are several foods that must be avoided because of possible interactions with the medications. Serious side effects can be the result of mixing something as simple as grapefruit juice with the wrong bipolar drug. In addition, you have to be careful with supplements and vitamins that can interfere with drugs.
Avoid Caffeine
Caffeine is a dangerous substance in the hands of a person with bipolar disorder. It is difficult for them to control, and it can interfere with their sleep patterns. Furthermore, caffeine is not recommended for people who are taking benzodiazepines which are common drugs used to control mania in bipolar individuals.
Avoid Grapefruit Juice
Grapefruit juice may seem to be safe and healthy, but people on some bipolar medications have to avoid it. If you are taking anticonvulsants and benzodiazepines, then drinking the juice with your medication could lead to serious complications. You may experience a toxic buildup of the medications.
Avoid High-fat Meats
High-fat meats are another dangerous item for people with bipolar disorder because they can lead to several problems. In addition to the obesity issues, these types of meats can interact with some bipolar medications and affect how long the body takes to absorb the drugs.
Avoid Foods with Tyramine
Tyramine is an amino acid that is found in several types of foods and has been linked to affecting blood pressure. You can find it in ripe bananas, fermented cheeses, aged meats, soy sauce, fava beans and other products. If you are taking monoamine oxidase inhibitors (MAOI), then eating these items could lead to hypertension. Drug interactions are a serious issue for people with mental health problems, so it is important for friends and family to stay vigilant and help them with their diets.

I was asked to review Bombay Lunchbox by Carolyn Caldicott. I wasn’t sure what I would find but I knew I loved Indian Recipes so thought I would share this book with you and the author is offering this book to one lucky reader! Author Carolyn Caldicott can be found at LoveFood.com. All comments are my own but I did receive this cookbook to facilitate review.
This is a cute hardback book with so many color photos of recipes and life in India. The photos bring this book alive! Carolyn starts off with a little history of how food in India changed after the British established themselves there in the eighteenth century. The heat of the country changed meals and lighter fare became the way of life between breakfast and dinner. The recipes in this book represent what one eats during the midday meal or meals. The new Brits had to learn how to cook their english favorites with new spices they had not encountered.
Most recipes are Gluten Free since the flour used is chickpea flour in India ( And Bob’s Red Mill carries that ). Yogurt is used a lot in the recipes but I am going to try Coconut Yogurt in it’s place when I make these recipes.
