I think I grew up in a rocking chair! My family always had a couple that we were rocked in or that we could rock in. Are you a Salmon lover like I am? Living in Alaska we catch our own Salmon and finding new and different recipes is always something we on on the constant look out for! We especially love to have a sauce to eat your our fish. This recipe for Salmon with Red Pepper Coulis is just the ticket for something different and fun.

Don’t let the word “Coulis” scare you, it’s just a fancy word for is a thick sauce that is made of vegetables or fruits. My daughter in law shared this recipe with us, she finds the most interesting recipes and then adapts them by making them gluten free and dairy free! Our grandson has an allergy to dairy so he needs recipes adapted too. This recipe packs the right amount of heat and sour for a very flavorful dish. Salmon with Red Pepper Coulis

Ingredients

6 - 8 oz salmon fillets
1 Tbsp Olive Oil divided for frying
4 Med Zucchini
2 Tbsp Fresh lime juice
1/4 c gluten free flour
1 tsp Shallots; minced
1/4 tsp Salt
1 clove Garlic; minced
2 Tbsp Balsamic vinegar
fresh parsley; Chopped garnish
1/8 tsp freshly ground pepper garnish
Red Bell Pepper Coulis Ingredients:
1 Tbsp jalapeño pepper; Minced
2 Tbsp Shallots; minced
2 Garlic; minced
3 c red bell pepper; Coarsely chopped
2 tsp olive oil
1/4 tsp sea salt
3/4 c Low-salt chicken broth

Instructions

Red Bell Pepper Coulis:
Heat oil in a large nonstick skillet over medium-high heat. Add bell pepper, shallots, jalapeno pepper, and garlic; saute 2 minutes. Cover, reduce heat, and simmer 10 minutes or until tender. Add broth; simmer, uncovered, 15 minutes or until liquid almost evaporates.
Place pepper mixture in a blender and process until smooth. Strain puree through a sieve over a bowl; discard solids. Stir in salt. Set Aside
Prepare Fish
Chop zucchini into 1/4 inch pieces, stopping at the inside part of the zucchini containing the seeds; discard middle portions.
Combine lime juice and next 4 ingredients (lime juice through garlic) in a small bowl.
Rub salmon with juice mixture.
Dredge salmon in gluten free flour.
Melt 2 teaspoons olive oil in a large nonstick skillet over medium-high heat.
Add salmon; saute 4 minutes on each side or until fish flakes easily when tested with a fork. Remove salmon from skillet. Set aside; keep warm.
Saute zucchini in oil for about 3 minutes and remove from heat.
Spoon Red Bell Pepper Coulis onto 6 serving plates, pour a little balsamic vinegar on each. Top with zucchini and salmon.
Garnish with chopped parsley and freshly ground pepper, if desired.

Indian Quinoa Pilaf Recipe

I love Indian cuisine and this book has restorative recipes that highlight a specific spice and how it helps heal. How cool is that? This recipe focuses on Turmeric which has anti-inflammatory and anti-cancer properties. It can heal your gut but did you know you need to not use pepper then?

Here is the yummy Indian Quinoa Pilaf Recipe:

Ingredients:

1 1/2 cups quinoa, washed and rinsed
12 ounces green beans, finely chopped
3 cloves garlic, minced
1 Tbsp ginger, finely grated
1 bay leaf
2 Tbsp olive oil
1 teaspoon turmeric powder
1/2 tsp red chili powder
1 tsp cumin powder
1 tsp coriander powder
1 1/2 tsp salt
1/2 lime, juiced
3 cups water
1/4 cup cilantro, washed

Directions:

Heat olive oil in 4 quart pan over medium heat and stir in green beans. Sauté the green beans for a minute then add garlic. Sauté for another couple minutes then add 1/2 salt. Cook another couple minutes.
Toss in the uncooked quinoa, ginger, bay leaf, turmeric, red chili powder, cumin, coriander powders and sauté until the quinoa is coated well with seasoning.
Pour in the water and season with the remaining 1 teaspoon salt. Bring mixture to slow boil, reduce heat to simmer and cover post and cook on simmer for 20 minutes.
When done cooking add the lime juice and sprinkle with cilantro and serve immediately.

When I realized this was much more than a cookbook, and concentrated on using spices in the recipes for healing, I was thrilled to see what this book had to say. I love Indian cooking and the spices mystify me. I plan on using Indian spices in the kitchen to continue my healthy living!

This book’s recipes are authentic Indian cuisine, but even more interesting is that Indian spices used in cooking are described for their healing properties and nutrients! Each ingredient has a special function in our body and there is a short tutorial about each ingredient highlighted in each recipe! How cool is that. The authors explain how the spices used affect the digestive system and in turn how that helps promote good health.

The book is divided into the following sections: Light Fare, Main Dishes, Gluten Free Breads, Accompaniments, Desserts, Energy Nut Bars and Beverages all of which are Gluten-Free and can be made Dairy-Free and Vegan!

Halibut Patties Dairy and Gluten Free

I love fish patties and this recipe for Halibut Patties is so yummy. I haven’t had fish patties since I went gluten free. My daughter in law served these patties and oh are they delicious. I love them with my home made tartar sauce. Living in Alaska we catch our own fish so this recipe is going to come in handy for another way to serve Halibut. I know you will love these Halibut Patties as much as I do. You could use salmon or any white fish or even chicken for this recipe.

Ingredients

1 pound halibut fillets poached and flaked (2 cups)
½ cup gluten free bread crumbs
1 Tbsp essence seasoning See Recipe below
¼ cup chopped green onions green parts only
2 tsp parsley
¼ cup Vegenaise or Mayo
1 tsp salt
¼ tsp cayenne pepper
1 tsp dill
1 beaten egg

ESSENCE SEASONING FOR THE HALIBUT PATTIES

2 ½ Tbsp paprika
2 Tbsp salt
2 Tbsp garlic powder
1 Tbsp pepper
1 Tbsp onion powder
1 Tbsp cayenne pepper
1 Tbsp oregano
1 Tbsp thyme
Combine all and store in an airtight container

Instructions

Combine all ingredients, shape into 4 patties and place on a plate. Refrigerate 20 minutes. Fry patties in a skillet in olive oil until golden, 3-5 minutes per side. Serve with your favorite sauce for dipping patties or make a fabulous sandwich with your choice of gluten-free bread and accompaniments.
