I have been craving some healthy baked goods! I think winter makes me crave carbs more. Since I am trying to stay dairy-free, I am so glad I discovered that yogurt helps make baked gluten-free products less crumbly. It reminds me of what buttermilk does to baked goods…making them so good. So I whipped up these yummy Blueberry Muffins. YUM.
Blueberry Muffins with Nancy’s Cultured Soy Yogurt
I found that Nancy’s Yogurt carries Organic Cultured Soy Yogurt as well as dairy yogurt products! And the soy yogurt works very well to help bind and give the gluten-free blueberry muffins wonderful moistness and less of a tendency to fall apart! Nancy’s Yogurt is the first U.S. yogurt company to add probiotics to its product since 1970! Having active live non- dairy cultures of probiotics tends to make their soy yogurt version a bit tart and tangy. The yogurt is a bit too tart for my taste to eat as is, but for baking it’s a killer! I used Nancy’s Vanilla Flavored Non-Dairy Yogurt in Bob’s Red Mill’s Gluten Free Muffin Mix and added blueberries to have something yummy for a fast healthy breakfast. Blueberry Muffins with Nancy's Cultured Soy Yogurt
Ingredients
- 1 package Bob's Red Mill Gluten Free Muffin Mix
- ½ cup vegetable oil
- 1 carton 6 onz Nancy's Cultured Soy Vanilla Flavored
- 2 organic eggs lightly beaten
- ¼ cup water
- 1 cup fresh blueberries
Instructions
- Set Oven to 400 degrees. Grease a muffin tin or use muffin baking cups. Mix all ingredients together in a bowl and blend well. Spoon batter into muffin baking cups filling each cup nearly to the top. Bake 22-25 minutes. Cool in pan 5 minutes then move muffins to a wire rack or cloth to cool. Makes 12 muffins. I love to eat them slightly warm. But they are just as good the next day. We keep them in a tupperware sealed container.

I love using Bob’s Red Mill products. This recipe sounds delicious and good for you at the same time.
It sounds good but does it cost more to buy these products? I know that something in my diet is causing me problems but I’m not sure what it is.
Hi Lisa, The products can be bought at a normal grocery store. I’m not sure what you mean by “cost more”? If you normally by mixes, yogurt or fresh blueberries then it should be in your range. I live in Alaska and everything costs more here than in the lower 48. You’ll have to compare prices.
I don’t remember ever trying a soy yogurt, but would love to. The recipe seems easy enough and always a fan of blueberries.
