Are you looking for a healthy breakfast smoothie? I have one for you! This recipe for a Blueberry Rhubarb Vanilla Smoothie is another easy, quick, and healthy recipe! You know from my last post on Rhubarb Pudding Cake all about the great nutrient value you get from Rhubarb. Blueberries are on the superpower list of fruits for what it can do for you.
Blueberry Rhubarb Vanilla Smoothie, Dairy and Gluten Free
From Medical News Today…they say this about Blueberries: “Warding off heart disease. The blueberry’s fiber, potassium, folate, vitamin C, vitamin B6 and phytonutrient content, coupled with its lack of cholesterol, all support heart health. The fiber in blueberries helps lower the total amount of cholesterol in the blood and decrease the risk of heart disease.”
I think we need to get back to whole foods! Doesn’t matter if you blend whole foods in a blender, you still get tons of nutrients. You actually are making it easier for your body to access the nutrients when you blend the food in a smoothie! You can blend it smoother than shown if you want to have it very smooth without bits of berries but once in awhile I like to have chunks of fruit in my drink.

We make a lot of smoothies but I have never added rhubarb! That is such a great idea. Can’t wait for my rhubarb in the garden to be ready. Love it.

Monique you need to buy a plant! You can’t kill them. Stick them outside and you’ll have it for life. I have taken root cuttings from the homestead in North Dakota where my grandparents lived and then taken a cutting from every place I lived as it grew and we moved! I’ve had it in Oregon, California, Montana, Alaska and it just keeps on going!
