The ability to create the perfect Macaroon is a feather in any home cook’s cap. Simple in ingredients but often problematic in execution, Macaroons are a perfect way to impress guests; they also make a lovely, thoughtful homemade gift. While plain vanilla Macaroons are delicious on their own, sometimes it’s fun to add some chocolate. Chocolate makes everything better, right?!
This recipe is wonderful because it includes no added refined sugar; these Macaroons are sweetened with honey, and that is it. Adding cocoa powder adds a wonderful rich chocolate-y taste without any added sweetener. The crushed almonds give a satisfying, nutty crunch that is perfect for the holidays.
Dairy & Gluten Free Chocolate Almond Macaroons
Ingredients:
- 2 egg whites
- 2 tbsp honey
- 1/4 tsp salt
- 1 tsp vanilla
- 2 cups shredded coconut
- 1 tbsp cocoa
- 1/4 cup crushed almonds
Directions:
1. In a mixing bowl, whisk together the egg whites, honey, salt, and vanilla.
2.Mix the cocoa powder in.
3. Fold the coconut into the whole mixture.
4. On a cookie sheet lined with a silpat or parchment paper, drop 1 tbsp of the batter for each cookie.
5. Sprinkle each cookie with a bit of the crushed almonds. I crushed my own almonds — put about 1/4 cup whole almonds in a ziploc bag and went at it with a meat tenderizer. 🙂
6. Bake at 325° for 15-20 minutes, until lightly toasted around the edges.
7. Let cool on the baking sheet about 10 minutes. Then, carefully transfer the cookies to a baking sheet.
Store these cookies in the refrigerator and eat within 2 weeks. Trust me, it won’t be a problem, it’s hard to stop at just one. If you feel like making plain macaroons, you still can, just leave out the cocoa powder and almonds. They’ll still be absolutely mouthwatering!
