This hot weather makes me crave something cold and Chocolate, like a fudgsicle! I love a cold popsicle but am craving something a bit more creamy. My niece sent me this recipe which sounded so great I had to try it. I don’t know why I never thought of using coconut milk!

My niece does not use cocoa…so instead she used carob and it turned out fabulous she said. BUT I am a hard-core chocolate cocoa person. My sister always tries to sneak in carob thinking I won’t know…but there is a taste difference. So those of you who do use carob, just know this recipe will work just fine with that substitution. You can use any type of popsicle mold that you like. There are some really fun looking ones out there!

Ingredients

  • 2 TBS cocoa powder
  • 1/2 C canned full fat coconut milk
  • 2 small very ripe bananas
  • scant 1/16th tsp salt
  • 1/2 tsp vanilla
  • 3 Tablespoons honey or sweetener of choice
  • Optional: add 1 Tablespoon of creamy peanut butter

Instructions

  • Blend all ingredients in Blender
  • Pour into popsicle mold
  • Freeze and enjoy
