Vegan Gingerbread Latte
This Vegan Gingerbread Latte is a great way to start your day, or as a special treat after dinner. This recipe again uses a blender to help “froth” the drink. I only recommend the Blendtec Blender and you can buy one HERE!

Do you love holiday flavors like peppermint and egg nog? This vegan Gingerbread Latte packed full of holiday flavor, and is a vegan option you can make at home.
Servings: 2 cups

Ingredients
- ½ cup brewed coffee
- 1 ½ cups almond milk
- 1 tablespoon molasses
- 1 tablespoon maple syrup
- ½ teaspoon cinnamon
- ¼ teaspoon ground ginger
- Splash vanilla extract
- ¼ cup canned full fat coconut milk
- 2 teaspoons sweetener of your choice
Instructions
- In a small saucepan, over medium heat, heat coffee and almond milk, stirring frequently
- Add molasses, maple syrup, cinnamon, ginger and vanilla extract and stir to combine
- When mixture is hot, pour into blender and pulse a few times to “froth”
- Prepare coconut whip by mixing coconut milk and sweetener in a bowl with a whisk or fork
- Top latte with coconut whip and garnish with a sprinkle of cinnamon or a drizzle of molasses
