Gluten Free Living Resources
Since being diagnosed with gluten intolerance only a year ago I continue to learn new things all the time. This is a great site for gluten free living resources. They offer information about what gluten sensitivity is via CD’s and Video. They also offer advice on online testing. Antibodies for gluten sensitivity are now tested via blood, stool and mine were done by saliva as well as blood. Some estimate as many as one in fifteen people have some sort of gluten sensitivity. If you are not able to get in to see a naturopath who can do the testing for you, this may be a great alternative to finding out if you are suffering from gluten issues.
Why all of a sudden is there such a rise in gluten intolerance and sensitivity? My idea has to do with how many times the wheat has been modified and that the kernels are no longer the wheat grain of years ago.
Since I have been on vacation the last three weeks I have not been eating as well as I should and I have eaten a couple of gluten products such as bagels and pizza dough and let me tell you, I have had abdominal cramps. Gluten Free is catching on, but having gluten free products available in bakeries is rare. Now that I am home I am back to eating no gluten. It is so much easier for me to eat at home when I am eliminating dairy and gluten from my diet. But in the long run it pays off because I feel so much better.

I agree with your theory that the rise is likely caused by all the genetically modified parts in our food as well as all the pesticides. I’m fortunate that I can still eat gluten myself, but I know my sister struggles.

My sister was diagnosed with Siliac Sprue (sp?) many years ago after many, many years of trying to find out why she was sick. Sadly, she passed away in 2009, unrelated to her disease. I wish she had resources like this when she was still living. There’s so much more awareness in the last few years. Every time I see recipes, foods, and restaurant menus advertising gluten-free, I think of her.

Thanks for the resource sites…I am suspecting my 15 y/o of gluten inolerance. He has had problems with his stomach since he was a small child, now he has mouth sores….so we are just starting out on the gluten free journey
