I have a fabulous Lentil Roast Recipe for you to try and it’s a great way to get protein into a vegan diet! I love vegan casseroles and hope you find this one yummy like I do.

Lentil Roast Leftovers are great in sandwiches
Servings: 6
Calories: 259kcal
Ingredients
- 1 1/2 cup cooked lentils
- 1 cup soymilk
- 1/4 cup olive oil
- 1/2 cup onion chopped
- 1/2 cup pecan meal I grind the pecans in a food processor or blender
- 1 tsp garlic powder I like to use chopped fresh garlic
- 1 1/2 cup cornflakes slightly hand crushed
Instructions
- Mix all the ingredients together in a bowl
- Transfer ingredients into an oiled casserole dish
- Bake at 350 for 45 minutes
- We like it served topped with ketchup but your favorite gravy or BBQ sauce would be yummy too
