No Bake Chocolate-Oat Bars, DF & GF

My daughter in law gave me this recipe for No Bake Chocolate-Oat Bars and said it was my son’s new favorite dessert bar.  I made it when they were down visiting and oh my gosh they are ooey gooey good!  It was gone the next day! My son heats his so that the chocolate is more melted when he eats his.   I must agree I prefer them melted just a few seconds myself.   You have to refrigerate them to have them set up.  But that extra microwave of 20 seconds puts them over the top!

No Bake Chocolate-Oat Bars

This is a one bowl recipe to mix everything in.  I used Bob’s Red Mill Organic Gluten Free Oats and their Shredded Unsweetened Coconut.  This recipe also uses pecans which really gives it a rich tasty crunch.   If you swap out the honey and use maple syrup instead, this will be vegan!

No Bake Chocolate-Oat Bars

My daughter in law gave me this recipe for No Bake Chocolate-Oat Bars and said it was my son's new favorite dessert bar.

Ingredients

  • 1 cup organic smooth peanut butter
  • 1/2 cup honey
  • 1/2 cup unrefined organic coconut oil
  • 2 cups rolled whole organic Gluten Free Oats I used Bob's Red Mill
  • 1 cup shredded unsweetened coconut I used Bob's Red Mill
  • 1/2 cup chopped pecans
  • 1 1/4 cups dairy free chocolate chips I use Enjoy Life
  • 1 teaspoon organic vanilla extract

Instructions

  • Melt the peanut butter, honey and coconut oil in a medium-size saucepan over medium-low heat. Stirring frequently. When it has blended and melted together, remove the pan from heat.
  • Stir in the remaining ingredients until the chocolate has melted and the ingredients are mixed well.
  • Pour into a greased 8x8 pan. Refrigerate until the chocolate hardens, at least 3-4 hours. Slice into 1"-2" square pieces. Store in the refrigerator. Enjoy!
