  3. I love chocolate, too! The recipe looks and sounds delicious. Have you ever tried it with an alternative sweetener? I’m always trying to substitute stevia or something for white sugar. Some things I’ve tried only seem to work good with real sugar, like cookies. But, it looks great and I love finding any gluten free chocolate recipe!

  5. I didnt know you could use coconut oil as a sub for veg.margerine… awesome one more choice. I LIKE the pictures you included, or else I would have believed a chocolate cake possible but one that was flat and compounded as a frisbee. You can’t see a difference, yours looks like a fluffy piece of chocolate cake..now I believe in vegan chocolate.

    1. Sandy,
Xanthan Gum takes the place of gluten making the cake more spongy and flaky. Bob’s Red Mill makes it and its in with the flours and sugars area.

  16. I have a friend who’s child is on a gluten free diet, and she was looking for a chocolate cake recipe for his birthday… I’m SO going to send her a link to this, it looks awesome!! I can’t wait for the party to try it!

  22. Oh Yum! I’m excited to try this! What brand/type of flour do you use for this recipe? I have found that certain recipes are better with King Arthur’s GF all-purpose vs Bob’s Red Mill vs. Pamela’s etc…

  23. This sounds really good…just have to find the right kind of flour (we put our granddaughter on a gf diet to the find out we were harming her more as many of the things use Soy as an ingredient…she has a severe soy allergy)

    1. Jackie,
My favorite flour is by The Pure Pantry…available in the lower 48 but up here in Alaska I have to order from her site. She uses brown rice, sorghum, quinoa flours and potato starch. Guaranteed gluten, dairy, soy, nut and egg free…and no refined sugar.

  24. Thanks so much for sharing this wonderful recipe with all of us, yum!! it looks so good, can’t wait to try this 😉

  28. This sounds really good! I have been thinking for last 6 months or so that I want to go vegetarian, I don’t think I am ready to be vegan…but it’s a new journey for me….I haven’t given up meat all together yet, but I am certainly on my way

    1. Hi Becky, Xanthan Gum is in with flours. Bob’s Red Mill makes it and it doesn’t take the place of eggs. You could use Guar Gum instead of Xanthan Gum. If you leave it out the bread is not as flaky and tender.

  29. I want to make this and see if everyone loves it as a “normally” made cake. Looks so good and much healthier

  30. I am not vegan, Ive never really looked into any recipes but this looks amazing! I may have to try this 😀 Thank you 😀
