Do you love Pumpkin Pancakes as much as I do? I use to love it when November rolled around because Pumpkin Pancakes would be on the menu. Having to eat Gluten-Free I would be so sad now going into pancake houses and not being able to eat their pancakes because they are NOT Gluten-Free. Problem Solved! I have a great recipe now for my own Pumpkin Pancakes that I would love to share with you. I use SO Delicious Pumpkin Spice Coconut Milk, available in the grocers only during the holiday season!
There is a recipe for Pumpkin Pancakes on the carton of this Pumpkin Spice Coconut milk. I was at my son’s home and I grabbed a can of pumpkin pie mix instead of pureed pumpkin. So my recipe is slightly different than what is on the carton, having more pumpkin spices in the whole mix. The pancakes were so good! My son gobbled them up and my grandson and granddaughter stuffed themselves and then had leftovers all week! We had them with peanut butter and real maple syrup. YUM
Here is the yummy Pumpkin Pancakes recipe:
Pumpkin Pancakes Recipe
Ingredients
- 1 1/2 cup gluten free all-purpose flour blend I used Pure Pantry
- 3 Tbsp natural cane sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 3/4 cup Pumpkin Pie Mix canned
- 1 1/3 cup So Delicious Pumpkin Spice Coconut Beverage
- 1 tsp vanilla
- 1 Tbsp olive oil
Instructions
- Mix all the ingredients listed above
- Pour 1/2 cup onto pancake griddle ( 3 pancakes fit perfectly )
- Use spoon to spread the mix around so it is very thin on the griddle
- Cook until little bubble come up in the middle then flip and brown lightly
- Serve with your favorite topping

Even though the Pumpkin Pie canned mix has the spices in it, do not leave out the extra spices in the recipe. The flavor of the pancakes is superb and not overly spiced even with the spiced SO Delicious Spiced Pumpkin Pie Coconut Milk and additional Spices! The photo above shows how they cooked up on a pancake griddle. I cooked one in a regular fry pan on stove top ( I did not grease the pan or the griddle ) The stove top pancake did not make as nice of pancakes as the griddle did. How yummy! I did not know there was a pumpkin flavor of the So Delicious non-dairy coconut milk (my non-dairy staple!). I’ll have to track it down and make these for my hubby and breakfast is always a challenge.
