Roasted Salmon with Cilantro Pesto Recipe

I love pesto sauces with salmon.  Since we eat gluten-free and dairy-free it can be hard to find great a great pesto.  Here my Daughter in law shares her recipe for Roasted Salmon with Cilantro Pesto!

Ingredients

  • 1 Tbsp garlic minced
  • 1 cup cilantro loosely packed
  • 5 Tbsp olive oil
  • Juice of one lime
  • Salt
  • 2 lb salmon fillet skin on
  • ½ can diced tomatoes

Instructions

  • Preheat oven to 400 degrees F.
  • Place the garlic, cilantro, 2 Tbsp of the olive oil, the lime juice, salt and pepper in a blender or food processor.
  • Process until creamy.
  • Brush a baking pan or sheet with the remaining oil and place the salmon in it.
  • Spread the cilantro mixture on the salmon, scatter the tomatoes over it, and sprinkle with a little more salt and pepper.
  • Bake, uncovered, until the salmon is done, 12-15 minutes.

  1. GF is not a niche where I specialize but I don’t think many people understand that it’s not that restrictive. I love my pestos too but I normally prepare the traditional Genovese version. I’ll definitely have to attempt this dish.
