Slow Cooker Cinnamon  Almonds

Once you realize how easy this recipe for Slow Cooker Cinnamon Almonds is, you’ll be shocked. (And you’ll start making it all the time). Originally, this recipe had over twice the sugar that I’ve included here. If you like your almonds sweeter, you could add a whole cup of white sugar to the recipe. However, I prefer my candied nuts slightly less sweet. If you are vegan, you can also omit the honey & egg white; they’ll still taste great. Just substitute 1/2 cup more brown sugar if you don’t add honey.

I love setting out a dish of Cinnamon Almonds when company comes over. It looks simple but elegant, and is guaranteed to please. Plus, candied nuts are a great snack since they’re filled with fiber and protein. Of course, this recipe makes them almost a dessert, since it adds sugar, but maybe a slightly less guilt-ridden dessert?

Recipe for Slow Cooker Cinnamon Almonds:

You’ll need:

  • 1 cup brown sugar
  • 1/2 cup honey (local, raw honey is best)
  • 2 tbsp cinnamon
  • pinch of salt
  • 1 egg white
  • 1 tsp vanilla
  • 3 cups raw, unsalted almonds
  • 1/4 cup water

Instructions:

1. In a medium bowl, beat the egg white and the vanilla until light and fluffy. Add the nuts and mix until they’re coated with the egg white mixture.

2. In a small bowl, mix the cinnamon, brown sugar, and salt.

3. Add the almonds to a 4-quart or larger slow cooker. Mix in the sugar mixture. Pour the honey over the top of everything and stir until all the almonds are completely coated.

4. Cook on low for 4 hours, stirring every 30 minutes. At hour 3, add the 1/4 cup of water. This will help the nuts get crispy.

5. Remove from the crockpot and place the almonds in a single layer on piece of parchment paper to dry. Let them cool and dry overnight.

6. Store in an airtight container.

  2. These sound wonderful. I love any recipe that I can make in the crock pot. I think they would look pretty stored in a mason jar.
