Are you craving some vegetables?  Here’s an easy and healthy dinner recipe for you with lots of veggies and vegetable protein, Minestrone Soup!   And the best part is that it is a Slow Cooker Recipe to be used in a Crock-Pot!   Another great meal to put together in the morning and forget it!   It’s ready in the evening when you are.   Just add a nice loaf of gluten free bread and enjoy.

Slow Cooker Minestrone Soup

Ingredients

  • 6 cups vegetable broth
  • 2 carrots chopped
  • 2 large onions chopped
  • 2 garlic cloves minced
  • 1 small zucchini cubed
  • 1 handful fresh kale chopped
  • 1 can chickpeas or white kidney beans, drained
  • 1 Tbsp parsley
  • ½ tsp dried thyme
  • 1 tsp dried oregano
  • 28 oz can crushed Italian tomatoes
  • 1 tsp salt
  • ¼ tsp pepper

Instructions

  • Combine all ingredients in slow cooker. Cover.
  • Cook on low 6-8 hours, or until vegetables are tender.
