Cinco de Mayo Recipe for Stuffed Boats

Cinco de Mayo is quickly approaching so here’s a Recipe for you! Whether you are just planning a fun family dinner or a fiesta with friends, these loaded lettuce boats are the perfect thing to serve. They don’t require hours of prep, plus, guests can customize the toppings to their own tastes.

Setting out clean white bowls with colorful toppings does double duty by creating a beautiful tablescape as well.

Don’t be intimidated by the list of ingredients. If you don’t have a particular ingredient (or just don’t care for it), leave it out! Also, I prefer my homemade guacamole and salsa to store-bought, especially since I have control over what goes in it. If you want to skip a step and buy it pre-made, go right ahead.

Stuffed boats

Ingredients

  • For the Guacamole:
  • 2 whole avocados diced
  • 1/2 beefsteak tomato fined diced
  • 1/2 onion finely diced
  • Juice of 1 lime
  • 1 tbsp cilantro
  • 1 clove garlic finely diced
  • 1 tsp cumin
  • For the Salsa:
  • 2 large tomatoes
  • 1/2 onion
  • 1 tsp cumin
  • 1/2 tsp Cayenne
  • 1/2 tsp red pepper optional
  • 1 clove garlic finely diced
  • 1 Can Amy's Organic Refried Beans they're vegan
  • 1 can or 2 cups sweet corn
  • 1 cup corn tortilla chips roughly crushed
  • Romaine leaves
  • 1 cup black olives roughly chopped (for garnish)

Instructions

  • Combine the guacamole ingredients and mix gently. Place in a serving bowl. Do the same for the salsa.
  • Drain the corn and place in a serving bowl. Do the same with the crushed tortilla chips and the refried beans.
  • Arrange the romaine leaves on a platter and garnish with the black olives.
  • Let guests create their own loaded lettuce boats and enjoy!

  1. Using a lettuce leaf is so much healthier and lighter than using a tortilla or taco shell. Great idea!

  2. I am amazed at just how wonderful and tasty those look. I am not always on the lookout for these kinds of recipes ~ so great in the hotter months when you don’t want a heavy meal.
