Have you ever made caramel corn at home? Even though it’s a staple of carnivals and festivals, once you learn how to make your own you may never buy it again! What’s beautiful about this recipe for caramel corn is that it is completely free of dairy and gluten. I also love the addition of maple syrup, as a low-glycemic index sweetener. The coconut oil also adds just a slight hint of sweetness, but it’s not overpowering. Plus, it only takes about 10 minutes from start to finish, making this an easy snack to have on hand.
Dairy & Gluten Free Caramel Corn Recipe
Ingredients:
- 1 bag plain organic (preferably) microwave popcorn, or 6 cups homemade popcorn made with coconut oil
- 1/3 cup white sugar
- 1/3 cup maple syrup
- 1 tsp coconut oil
- 1 tsp vanilla extract
- pinch of sea salt
Instructions:
1. Pop the popcorn according to package instructions.
2. In a small saucepan, combine the sugar, maple syrup, coconut oil, and vanilla.
3. Bring to a low boil, then reduce heat to low. Simmer on low, stirring constantly, for no more than 4 minutes. If you get a slight burning smell, take it off the heat immediately.
4. Pour the popcorn into a large bowl, then drizzle on the caramel sauce. Mix together carefully.
5. Spread the caramel popcorn mixture out onto a baking sheet. Try to keep it in a single layer so it doesn’t stick together too much. Give it a pinch of the sea salt. Let cool.
6. Store in an airtight container, up to 3 days.

I’ve been trying to get my family away from microwave popcorn, because of both the carcinogenic effects of the lining when microwaved, and also some oils in some microwave popcorn. They do like popcorn because it’s healthy, but I’d love to show them that REAL popcorn is pretty effortless and worthwhile.
