I know that I have had requests for Oatmeal Pancakes. So I wanted to pass on one version of Vegan Gluten -Free Oatmeal Pancakes served with Honeyed Mangoes. But any fruit in a cooked sauce would be tasty on these I am sure. These are very quick and easy to make, perfect for busy mornings.
Oatmeal Pancakes
Oatmeal Pancakes with Honeyed Mangoes
Ingredients
- 1/2 cup quick oats gluten-free OR coarsely ground GF Oats
- 1/2 cup unsweetened applesauce
- 1 tsp vanilla
- 1 tsp cinnamon
- Ingredients for Honeyed Mangoes:
- 1 or 2 Mangoes
- 5 tsp agave
- 1 tsp nutmeg
Instructions
- Stir all ingredients together.
- Coat a small skillet with cooking spray and warm up.
- Spread Oat Mixture into pan, flattening like a pancake.
- Cook on low/medium heat until bottom is brown.
- Carefully flip over and brown other side.
- Slide Oatmeal Pancake onto plate and serve with Honeyed Mangoes.
- For Easy Honeyed Mangoes:
- Peel and slice Ripe Mangoes in strips
- Place Mangoes in a medium, microwave safe bowl.
- Add 5 Tsp Agave and 1 Tsp Nutmeg to the Mangoes
- Stir to Coat
- Microwave for 3 1/2 - 5 minutes, until mangoes are tender.
- Stir Mangoes to make sure they are evenly coated and serve over pancakes

I have been confused about the whole gluten free movement, because we’re taught that those foods are good for us, no one in my family has a gluten allergy, but it’s still cool to learn how to cook gluten free food, never know when one of their friends does have an allergy, or just lives in a gluten free household.

It’s really not a movement so much as an increase in gluten intolerance in the general population. They do not understand why this increase is happening but it is truly genuine states Dr Green who is Celiac Director at Columbia University. More studies need to be done because people do not have Celiac but increasing gluten intolerance/sensitivity which causes the same physical symptoms as Celiac.

Hi Peaceweaver…no reason for not including baking powder.
You are correct honey is not vegan that is why there are substitutes of maple syrup or agave to use.
I am also changing my blog name to reflect Dairy-Free and Gluten-Free instead of Vegan since I use honey and eggs. That should be completed soon.
Dates would be wonderful to add for sweetening and fiber! I love dates.

Honey is not vegan. Despite that, most fruit is sweet enough without adding any extra sugar. I would rather add dates to the mixture to at least get some whole food and more fiber.
