Coconut Chocolate Chip Gluten Free Cookies

I have not used coconut oil much in cooking so I was very happy when Tropical Traditions sent me their Gold Label Virgin Coconut Oil to try.
If you buy from them you don’t need to worry about jars breaking in shipment! This jar was packaged and cradled so well I think it would have survived any dropping in shipment.
My husband and son really liked these cookies but stated that there was a distinct coconut flavor which tasted good but took my son off guard because he didn’t know I had used coconut oil as the fat replacement in the recipe. You can click here and get the recipe for the Coconut Chocolate Chip Gluten Free Cookies. It was really easy to get the coconut oil out of the jar. I melted it in the microwave and mixed it as the recipe says.

@GBelair I took Minocin (a fluoroquinolone antoibitic) 20 years ago for acne. I was very allergic to it had the worst itching in the palms of my hands soles of my feet an itch you could scratch all day never relieve! It was awful. I can’t remember timing on this, but I did develop SEVERE brain fog which I still suffer from to this day, though not as severe. I was diagnosed with narcolepsy 10 years ago (brain fog also comes with narcolepsy). Perhaps my narc. was triggered by the Minocin.

I am only a few months raw, but even then, I can’t fgruie out why anyone wants any added oil. Dr Essylstyn even convinced me to let go of all oil the final one was olive oil, which I was drizzling on my evening salad. That was hard, but I found alternate ideas. Depending on how clean one is depends on what you are willing to put in your body. Brain fog is gone, a lifelong problem, with a raw food diet. If it helps you, for now, then use it, but I hope you get rid of it eventually.
Scott M says
I would also make cookies with this.
