Easy One-Pot Meals:
Awesome Pot Roast
I love cooking a Pot Roast in a slow cooker, aka a crockpot! The meat gets so tender, the kitchen doesn’t get heated up and it is fast and easy to prepare. We ate at Ryan and Becky’s this last week and she made a roast that was to die for! I was a bit skeptical because it was caribou meat and I do not like game meat, it always has a “taste” that I just don’t like no matter what kind of game I eat. But with the seasonings on this roast it was fantastic and truly I wouldn’t have known it was anything but beef. So for you Pot Roast lovers…here is a fabulous, delicious recipe you have to try! We use purple potatoes because they grow good in my garden, but any potato will do.
First you will want to grab some great wine because that will be going in the crockpot!
Ingredients:
2 tablespoons Vegetable oil |
1/2 teaspoon Black pepper; ground |
1 Bay leaf |
1 pound potatoes |
1 cup beef broth, or 1/2 cup broth and 1/2 cup red wine, we used WINE |
16 ounces onions |
1 teaspoon Salt |
1/2 teaspoon Marjoram; fresh if possible |
1/2 teaspoon Rosemary; fresh if possible |
1/2 teaspoon Thyme; fresh if possible |
3 cloves Garlic; minced |
1 pound Carrots; thickly sliced
1 pkg dried onion soup mix or gluten-free dried onion like soup mix |
Directions:
Awesome Pot Roast
1. Heat oil in a Dutch oven or large pot and brown meat on both sides.
2. Stir in the broth, spices and onion soup mix. Mix well.
3. Heat to boiling. Take meat out and place inside the slow cooker/Crockpot.
4. Cover the meat with small potatoes, boiler onions and thickly sliced carrots.
5. Pour the broth, spices and onion soup mix on top of the meat and vegetables in the slow cooker/Crockpot.
6. Cover with water if necessary.
7. Cook for 10-12 hours in the slow cooker/Crockpot, on LOW setting. Cooking on HIGH setting, while not recommended, will prepare this food faster but the meat won’t be as tender and the overall taste won’t be as good. It’s better to set aside the extra time to cook it on low, you won’t be disappointed!
8. Remove meat and slice, place on a platter with vegetables around the meat. Strain the liquid and serve with the meat.
