We eat lots of fish, particularly Salmon because we live in Alaska and like to eat wild fish. We all know of the great benefit of omega-3’s from salmon. There are new studies now showing that salmon contains small bioactive protein molecules (called bioactive peptides) that may provide special support for joint cartilage, insulin effectiveness, and control of inflammation in the digestive tract. This is great news if you like to eat Salmon!
Again, Thanks to my daughter-in-law Becky for her recipe for Mediterranean Salmon. As we are learning, the secret to fish is in the sauce and spices. This is delicious.
Ingredients:
½ cup olive oil
¼ cup balsamic vinegar
4 cloves garlic, pressed
4 (3 ounce) fillets salmon
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh basil
1 ½ teaspoons garlic salt
Directions:
- Mix together the olive oil and balsamic vinegar in a small bowl. Arrange the salmon fillets in a shallow baking dish. Rub garlic onto the fillets, then pour the vinegar and oil over them, turning once to coat. Season with cilantro, basil, and garlic salt. Set aside to marinate for 10 minutes.
- Pre-heat your oven’s broiler.
- Place the salmon about 6 inches from the heat source, and broil for 15 minutes, turning, once, or until browned on both sides and easily flaked with a fork. Brush occasionally with the sauce from the pan.

I don’t like salmon at all. It’s way to gamey tasting. I checked this out for the marinade mix. I will use it on tuna steak, It sounds good.
